At Balblair, you'll explore the oldest distillery in the Highlands, renowned for its time-honoured traditions. “As the quintessential distillery, Balblair sits on a remote and unspoiled hillside overlooking the Dornoch Firth in the North of Scotland. Our whiskies are the embodiment of everything we stand for. We use only the finest ingredients and traditional processes to craft our distinctive, characterful whisky.”
Glenmorangie, with its towering stills, is celebrated for producing some of the finest and most complex single malts. “The giraffe has long been a beloved symbol of our Highland Distillery. The same height as a giraffe, our stills allow more space for taste and aroma, which is why Glenmorangie’s spirit is so wonderfully delicate and fruity.”
Dornoch Distillery, operated by the Thompson Bros, is a modern craft distillery known for its innovative approach to whisky-making. “Dornoch Distillery was born out of a successful crowdfunding campaign which saw 200 whisky enthusiasts from all over the world dig deep in support of the philosophy of bringing old styles of distillation back to life. 2017 saw the first batch of Dornoch New Make Spirit crafted and laid to cask, with over 500 casks being filled since.”
Carnegie Whisky Cellars in Dornoch offers an exceptional selection of rare and exclusive whiskies, perfect for connoisseurs. “The Carnegie Whisky Cellars opened in June 2016 and quickly established a reputation for great service and product knowledge. We stock an extensive range of spirits produced throughout Scotland, with over 450 whiskies, 60 gins, liqueurs and other bespoke items.”
Clynelish, famed for its waxy, fruity spirit, is a favourite among enthusiasts. “Clynelish proudly serves as one of the Four Corners distilleries of Johnnie Walker. Here, craftspeople distil the rich Highland malt that is enjoyed around the world on its own and as a vital component of Johnnie Walker whiskies. Take the opportunity to discover the mysterious and hidden spirit of Clynelish’s coastal Sutherland home, where this rich, waxy whisky carrying notes of tropical fruit and honey is distilled.”
Finally, Glen Ord, The south east Asia exclusive Singleton, produces beautifully balanced whiskies that capture the essence of the Highlands. “The new Singleton whisky visitor experience is inspired by a passion for making perfectly balanced, delicious whisky and an Epicurean spirit which finds pure joy in exceptional food and drink. Based within the Glen Ord Distillery, one of three storied distilleries which make The Singleton brand.”
Alternative Stops
Black Isle Brewery is an organic brewery producing a wide range of craft beers. They offer tours that include tastings and insights into their organic brewing process. “Since its inception in 1998, Black Isle Brewery has consistently produced world class beers. However, the driving force behind what we do has always amounted to something much bigger. We wanted to demonstrate that this can be done using naturally grown barley and hops, supporting organic farmers and growers who also care for the environment.”
Cromarty Brewing Co. This family-run brewery is known for its small-batch craft beers, particularly hoppy and aromatic ales. “All of our beers whether in cask, keg, can or bottle are completely non-pasteurised or filtered and jam packed full of quality ingredients, giving boat loads of flavour.”
Toulvaddie is a brand new micro whisky distillery in Fearn the North East, Highlands of Scotland. “At the foot of Nigg Hill, on the Tarbat Peninsula in the Highlands, on the site of the old World War II Royal Naval Air base HMS Owl, Toulvaddie Distillery stands in centre of fertile arable farmland. With iconic scenery and industry surrounding us its truely a great place to be. In an area full of Pictish heritage there is so much to celebrate about the area”
